A few weeks ago I shared this recipe for homemade Banh Mi Sandwiches and since then I’ve been looking for new ways to re-create the traditional flavors of the classic Banh Mi. This recipe doesn’t vary too much from the one I previously shared but, well…it’s just so good there really wasn’t much to change!
I decided to use portobello mushrooms in leu of chicken and I’m so glad that I did. Marinated in a combination of ginger, five spice powder and soy sauce, the portobellos are the perfect compliment to the salty, pickled vegetables.
Served with a chili dipping sauce, these Portobello Banh Mi Lettuce Cups are super satisfying, flavorful and straight up delicious!
Portobello Banh Mi Lettuce Cup:
Ingredients:
Marinade:
– 3 cloves of garlic, minced
– 1 large shallot, chopped
– 1 tablespoon, peeled and minced fresh ginger
– 2 teaspoons honey
– 1/3 cup soy sauce
– 2 tablespoons fish sauce
– 1 teaspoon five-spice powder
– 1 teaspoon fresh ground black pepper
– 4 portobello mushrooms
Pickled Diakon, Carrot, Jalapeno
– 2 large carrots, thinly sliced into matchsticks
– 1 daikon, thinly sliced into matchsticks
– jalapeno, thinly sliced and seeds removed
– 1/2 cup white wine vinegar
– 1/2 cup rice vinegar
– 2 teaspoons raw sugar
– warm water if needed
Chili Dipping Sauce
– 2 tablespoons rice vinegar
– 2 tablespoons water
– 1 tablespoon honey
– 1 tablespoon chili garlic sauce
– 1 tablespoon sesame oil
– 1 teaspoon soy sauce
Other
– lettuce cups
– peanuts
– cucumber
Directions:
– Using a blender or food processor, blend the ingredients for the marinade. In a shallow dish, pour marinade over the mushrooms and let sit for at least 15 minutes and up to 1 hour.
– Cook the mushrooms on medium in a large skillet for 10 minutes on each side, or until tender.
– In a medium sized bowl, add the daikon, carrot, cucumber and jalapeño. Cover with the pickling liquid and let sit for at least 1 hour and up to overnight. You can make the pickled veggies a week in advance!
– Combine the ingredients for the chili dipping sauce and assemble the lettuce cups.
