Kettle Brand Chip Pairings + A Summer Picnic

June 25, 2015 |

SAMSUNG CSC

Nothing says summer quite like a an afternoon picnic and needless to say, I’ve definitely had picnics on my mind. In collaboration with Kettle Brand, I’ve come up with a few sandwich and chip pairings that are sure to make your next picnic extra delicious. Potato chips are the quintessential American snack and Kettle Brand takes things up a notch with their array of flavors and clean ingredients. Yay for non-GMO!   When I received my chip shipment I was intrigued and excited to find flavors like Pepperoncini, Sriracha and Maple Bacon, I immediately knew that I needed to think outside of the box when it came to pairing these fancy flavored chips with an appropriate sandwich.

The Cuban sandwich; made with ham, pork, swiss cheese and pickles, was the perfect compliment to these Dill Pickle flavored potato chips.

These Maple Bacon Potato Chips are seriously binge worthy. They have a slight smokey and sweet flavor which paired perfectly with this Chicken and Waffle Sandwich (which was topped with a tangy maple mustard sauce!)

While sandwiches and chips are a fool proof combo I was excited to get creative and try a variety of Kettle Brand flavors!

Fish and chips is the first thing that comes to mind when I think of Kettle Brand Sea Salt & Vinegar Chips. Paring my all time favorite chip flavor with a classic Tuna Salad Sandwich was a no brainer!

Pepperoncini flavored chips called for none other than the Classic Meatball Sub!

These Sriracha Potato Chips called for a truly special sandwich. Something that could balance without overpowering the spicy Sriracha flavor. This Bahn Mi with Sriracha mayo hit the nail on the head. A grilled Vietnamese five-spice chicken with the classic pickled vegetables made this Bahn Mi truly special and the perfect counterpart to Kettle Brand Sriracha Potato Chips!

Bahn Mi with Sriracha Mayo:

Slide1

Ingredients:
Grilled Vietnamese Five Spice Chicken
– 3 cloves of garlic, minced
– 1 large shallot, chopped
– 1 tablespoon, peeled and minced fresh ginger
– 2 teaspoons honey
– 1/3 cup soy sauce
– 2 tablespoons fish sauce
– 1 teaspoon five-spice powder
– 1 teaspoon fresh ground black pepper
– 1 1/2 lb chicken thighs
Pickled Diakon, Carrot, Jalapeno
– 2 large carrots, thinly sliced into matchsticks
– 1 daikon, thinly sliced into matchsticks
– jalapeno, thinly sliced and seeds removed
– 1/2 cup white wine vinegar
– 1/2 cup rice vinegar
– 2 teaspoons raw sugar
– warm water if needed
Sriracha Mayo
– 1/3 cup mayo
– 1 teaspoon Sriracha, more or less depending on how spicy you want it.
Other
– 1/2 cucumber, thinly sliced
– cilantro
– French bread baguette cut into thirds

Directions:
Vietnamese Five Spice Chicken
– In a food processor or blender combine garlic, shallot, ginger and honey until well combined. Mix in the soy sauce, fish sauce, five-spice power and black pepper.
– Marinate chicken for 3 hours or up to overnight.
– Grill the chicken on medium heat, 7-10 minutes per side (you will know when its ready to flip, it should come off the grill easily. If it is sticking, its not ready!).
– Let cool for 5 minutes
Pickled Daikon, Carrot Jalapeno
– Add all ingredients into a mason jar or air-tight container. You want the vegetables to be completely covered by the liquid. Add warm water if necessary to cover vegetables.
– Let sit for at least 1 hour. Store in refrigerator for up to 1 week
Sriracha Mayo
– Mix mayo and Sriracha togeter. Add more or less depending on heat preference.
Assemble your Bahn Mi:
– Slice your baguette and spread Sriracha mayo on the inside of the bread.
– Layer the cucumber, chicken and pickled vegetables. Top with fresh cilantro.
Enjoy with a side of Kettle Sriracha Chips!

– Cook waffles according to your waffle maker’s instructions.
Maple Mustard Sauce:
– Combine equal parts of mustards and maple together. Mix well.
