Thyme Roasted Sweet Potato Fries with Sun Dried Tomato Ketchup

Sweet Potatoes are hands down one of my favorite foods- they’re amazing when roasted and thrown in salads, pureed into soups and of course baked into delicious fries. 

Made even better with my delicious homemade Sun Dried Tomato Ketchup. While I can’t really call it a traditional ketchup because of it’s cashew base, it is seriously the best condiment for these fries.  I make these fries almost weekly and on occasion we’ve been known to make a meal out of them but they’re really the ideal side dish to any burger or piece of grilled chicken. And…they couldn’t be any easier to make. Here’s how you do it…

Thyme Roasted Sweet Potato Fries with Sun Dried Tomato Ketchup:

Ingredients:
– 2-3 large sweet potatoes, cleaned
– 1 tablespoon fresh thyme + more to top
– 1/2 tablespoon kosher salt + more to top
– glug of olive oil
Sun Dried Tomato Ketchup
– 1/2 cup raw cashews
– 3 tablespoons water
– 1 tablespoon sun dried tomatoes in oil
– 1 teaspoon tomato paste
– 1 clove garlic
– 1/4 teaspoon salt

Directions:
– Heat your oven to 400 degrees. Slice the potatoes into wedges or julienne strips. Make sure they are all about the same size. Drizzle with olive oil, thyme and salt, mix well and lay evenly across a baking sheet.
– Roast for 35-45 minutes flipping half way through
– Remove from oven and sprinkle with more thyme and kosher salt.
Ketchup
– In a food processor combine all ingredients and blend until smooth. Add more water to thin, until you reach your desired consistency.

    Sweet potato fries are my fave ! I usually make them either a lemon garlic aioli but that sundried tomato ketchup sounds amazing! Gotta try this recipe! Thanks for sharing lady!
