I have to admit the idea of eating a popsicle for breakfast makes me more than a little excited and definitely brings out my inner child. It feels almost sneaky to enjoy what I usually consider to be a dessert, for breakfast. I mean…popsicles at breakfast?! It’s a thing my friends, and they’re called smoothie pops.
Strawberry, banana and watermelon make up the base for these pops that are blended with chia seeds and flecked with little bits of coconut. Basically they’re exactly what they sound like…a smoothie frozen into individual popsicles. Ideal for a grab and go breakfast or a mid day snack and they are so refreshingly fruity!
Strawberry Watermelon Smoothie Pops:
Makes 12 popsicles using this mold
Ingredients:
– 3 cups watermelon
– 1 cup strawberries
– 1 large banana
– 2 tablespoons chia seeds
– 2 tablespoons shredded coconut
– juice from 1 lime
Directions:
– Place all ingredients except for the shredded coconut into a high powered blender or food processor. Blend until smooth, add in shredded coconut and pulse one time, just until combined.
– Pour into popsicle mold and freeze.
