Simple Asian Slaw

One of the many things I love about this salad is that it works just as well as a side dish (it’s amazing with these Poke Tostadas!) as it does as a main dish, when topped with grilled chicken. I’ve been making it almost weekly and my husband and I can’t get enough of it! It’s sweet, crunchy and savory and comes together in minutes. It couldn’t be more simple to make combining cabbage, kale and carrots with the most delicious tangy ginger dressing. Bonus- the longer it sits the better it gets so you’ll want to make extra to enjoy throughout the week!

Simple Asian Slaw:

Ingredients:
– 2 cups shredded red cabbage
– 2 cups shredded napa cabbage
– 1 cup kale, finally chopped (about 4 leaves)
– 2 carrots, julienned
– 2 green onions, thinly sliced
– 2 tablespoons sesame seeds
– 2 tablespoons toasted cashews
Dressing
– 1/3 cup rice vinegar
– 1/4 cup toasted sesame oil
– juice from 1 lime
– 1 tablespoon soy sauce
– 1 tablesoon honey
– 1 clove garlic, roughly chopped
– 1 inch piece of ginger, peeled and grated
– red pepper flakes (more or less depending on heat preference)

Directions:
– Mix dressing together and pour over salad ingredients. Toss and sprinkle with sesame seeds and toasted cashews. Enjoy!

    I had a bag of Dole Colorful Coleslaw in my fridge ready to go and your recipe came at the perfect time for inspiration. On the back of the bag is a recipe for Asian Coleslaw dressing that is similar to yours, but I stuck with yours. So delicious and crunchy – very nice! It will make for a great side this weekend!
