Not only that but they’re unbelievably fluffy making them the perfect pancake to whip up for your next weekend brunch. Made with oat flour and maple syrup, you won’t even notice that these Pumpkin Spice Pancakes are 100% healthy! Ingredients
- - 1 cup + 2 tablespoons oat flour
- - 2 tablespoons pumpkin pie spice
- - 1/2 teaspoon baking soda
- - 1/2 teaspoon salt
- - 2/3 cup pumpkin puree
- - 1/3 cup applesauce
- - 1/3 cup almond milk (or milk of your choice)
- - 2 tablespoons maple syrup + more to top
- - 1 teaspoon vanilla
- - 2 eggs
- - crushed walnuts to top
Instructions
- In a blender combine oats and blend until flour consistency. Add pumpkin pie spice, baking soda and salt. Blend until mixed.
- In a mixing bowl add in the remaining ingredients; pumpkin puree, milk, apple sauce, eggs, vanilla, maple syrup. Mix well.
- Add dry ingredients to wet ingredients and stir until combined.
- Use a 1/3 cup scoop to scoop out the batter and pour onto a non-stick skilled.
- Cook on medium high for about 3 minutes or until the bottom is cooked, flip and cook another 2 minutes.
- Serve with a pat of butter, maple syrup and crushed walnuts.
