This is my idea of the perfect late summer appetizer. Ideal on a warm afternoon paired with a crisp glass of rose these Fig and Goat Cheese Spears are fresh and oh-so flavorful. They’re topped with fresh thyme and rich balsamic vinaigrette and come together within minutes which makes them the ultimate appetizer to serve at your next party!

Fig and Goat Cheese Spears:
Ingredients:
– 3 tablespoons soft goat cheese
– 1 tablespoon honey + extra to drizzle
– 1 tablespoon chopped walnuts
– fresh figs, thinly sliced
– endive spears
– thyme
– balsamic vinegar
Directions:
– In a small bowl mix goat cheese and honey together.
– Spoon a teaspoon amount onto each endive spear. Top with sliced Fig and walnuts.
– Drizzle honey and balsamic vinegar over the top and sprinkle fresh thyme.
Use these measurements as a guide and adjust according to how many you are making!

Oh man, this looks amazing!! It’s funny because just this week, I was thinking of goat cheese (I had a salad last week at a restaurant and there was goat cheese in it that added such a good kick to it) I’m going to have try this recipe at my housewarming party!!!
