Carrot Ginger-ade

Easter is just a few days away and I have one thing on my mind…brunch cocktails. And because it’s easter you know it has to be something equally festive and delicious…. enter the carrot cocktail. 

If you haven’t tried fresh carrot juice you’re missing out and if you haven’t tried it in a cocktail, you’re really missing out. It’s slightly sweet and in this case pairs perfectly with the ginger and lemon. It’s so refreshing and delicious that I’ve been making it into a ‘mocktail’ to enjoy throughout the day. As for a boozy Carrot Ginger-ade… It’s absolutely delicious with vodka and gin but I think adding in a shot of tequila and a splash of triple sec make for a real winning combination. Either way it’s the perfect festive cocktail (or mocktail) to serve up on Easter and to enjoy all spring long!

Carrot Ginger-ade:
serves 1

Ingredients:
– fresh carrot juice
– fresh lemonade
– ginger beer
– red pepper flakes
– heirloom carrots

Directions:
– Fill a glass with ice
– Pour in equal parts carrot juice and lemonade. Top with ginger beer.
– Garnish with a sprinkle of red pepper flakes and an heirloom carrot.
Cocktail Options:
– 2 ounces vodka or gin
or
– 2 ounces tequila + 1 ounce triple sec
