Buffalo Chicken Lettuce Cups

Super Bowl Sunday is just over a week away and while I may not be much of a football fan, I am a fan of football parties and anything covered in buffalo sauce. I’m a huge sucker for wings (this is super surprising to most people who know me) and while I indulge in them a couple times a year I usually opt for something a little healthier. These buffalo chicken lettuce cups are the perfect substitute and my new favorite way to enjoy buffalo sauce. Bonus: they have a fraction of the amount of calories that buffalo wings do (so you can enjoy that extra beer!)
These lettuce cups are the perfect snack for Super Bowl Sunday, if you’re having a party just prep everything ahead of time and let your guests make their own. This one is just as much for the guys as it is the girls. Its a sure win for everyone!

SAMSUNG CSCBuffalo Chicken Lettuce Cups:

Ingredients:
– 2 lbs chicken breast or thigh
– 1 cup buffalo sauce
– 1 carrot julienned (I use this tool)
– 2 celery stalks, diced
– bib lettuce
– blue cheese crumbles

Directions:
– Heat oven to 375 degrees. Place the chicken in a baking dish and cover with half buffalo sauce. Cook for 25 minutes or until cooked through
– Let cool then shred, add more sauce.
– Assemble the lettuce cups: Add chicken, carrot and celery then top with blue cheese and extra sauce.
– Optional toppings: blue cheese dressing, ranch dressing, cheese

Enjoy!
