Normally when I think of quinoa I don’t think of it as a breakfast food. I usually reserve it for lunch or dinner and I think it’s safe to say that the majority of you are thinking along those same lines. Well, I’m here to change your mind. Quinoa is so dang tasty at breakfast! I’m a big oatmeal fan so switching out the oats for quinoa has been a tasty way to keep breakfast interesting. I love the combination of the nutty quinoa and the almonds as well as the sweet almond milk and strawberries. It’s all around goodness and bonus (!!) all the protein in the quinoa will keep you full all the way until lunch time. If you like oatmeal or even if you don’t, try swapping out the oats for quinoa. It’s a total game changer and you’ll like it, I promise!
This is a super duper quick recipe and you can easily make it in the morning while getting ready for work/school/yoga!
Breakfast Quinoa with Strawberries and Almonds:
Prep it:
– 1/2 cup sweetened vanilla almond milk, plus more to pour over cooked quinoa
– 1/4 cup quinoa
– 1/3 cup strawberries, sliced
– 1/4 cup almonds, roughly chopped
– 1/4 cup coconut flakes
– honey
– cinnamon
Make it:
– Rinse quinoa. In a pot bring almond milk and quinoa to a boil. Reduce to a simmer and cover. Let cook for 10-12 minutes.
– Transfer to a bowl, add strawberries, almonds and coconut flakes. Drizzle with honey and cinnamon.
– If you’d like, pour more almond milk over quinoa. (Its delicious with a little extra milk!)
