I’ve been on the hunt for the perfect summer dessert to serve to guests. Lately I’ve been keeping things super easy by just whipping up a batch of cookies but to be honest, cookies only go so far and don’t quite finish off the evening with that “wow” factor. I like desserts that can either be made ahead of time or that require little to no prep work (its never fun to leave the party to work in the kitchen!!) and this one is definitely the latter. These Pina Colada Soda Floats are so refreshingly delicious and I’m warning you -with one sip you’ll be instantly transported to a tropical Hawaiian beach. But really, they’re creamy, fruity, and absolutely delightful- who wouldn’t want a Pina Colada for dessert (or snack if you’re like me)?! Feel free to make this a boozy treat by adding a rum floater…
Pina Colada Soda Float:
– Add 2-3 scoops of Coconut Ice Cream to your glass. Add pineapple chunks and top with Pineapple soda. Squeeze a bit of lime and sprinkle shredded coconut over the top.
